Vineyards located on the morainic hills of Lake Garda. The Garda microclimate, influenced by the lake breezes, is mild with low day-night temperature variation. The vineyard is cultivated using the traditional pergola system.
Production
After manual harvesting in September, pressing is soft with static cold decantation for 24 hours. Fermentation takes place in steel, with a small portion in wood (tonneaux), with frequent bâtonnages. The blend then remains in steel until bottling.
Tasting notes
Straw yellow with golden hues. Fruity notes reminiscent of ripe pear, golden apple, yellow peach, combine with light floral nuances of acacia and broom. A very delicate vanilla note. Well-balanced, with aromas that confirm the fruity notes, and a pleasant savouriness.
Pairings
Excellent with light dishes such as pasta or vegetable risotto, with white meats and fish, and egg-based recipes. For aperitifs, it pairs well with snacks and finger food.
Serving
It is a dry and light white wine to be drunk young, in a moderately narrow glass with a wide rim. Serving temperature: cool, not cold (10-12°C).
In Don Bosco's vineyard, the fruit of his Charisma and his teaching ripens: "reason, religion, loving-kindness."
