Vineyard

Vineyards located on the morainic hills of Lake Garda. Garda microclimate, influenced by lake breezes, mild with low temperature fluctuations between day and night. The vineyard is cultivated using the traditional pergola system.

Production

After manual harvesting at the end of September, the red grapes are directly immersed in tanks with about 8 hours of maceration, until the desired rosé tone is obtained. At this point, part of the must is separated and transferred to another tank for rosé wine fermentation (saignée method), with a controlled temperature of 15-17°C. The wine remains in steel containers until bottling.

Tasting notes

A pale salmon color, lively and inviting. Fruit is the protagonist with evident notes of cherry and raspberry, complemented by floral nuances of rose. A very light touch of strawberry candy on the finish. It is pleasantly enveloping and fresh, with a long finish that recalls citrus fruits, especially mandarin.

Pairings

Excellent as an aperitif, it excels with first courses, Lake Garda fish sauces, 'sarde in saor' (sardines in sweet and sour sauce), whitefish, and white meats, including grilled.

Serving

A rosé wine to drink while young. The glass should be medium-sized, a tulip glass.

Serving temperature: cool, not cold (10-12°C).

Saint Dominic Savio asks: "So, what do you think of me? Will you take me to Turin to study?". Don Bosco, knowing that the young boy's mother was a seamstress, replies: "It seems to me that you have 'good fabric' in you, which can be used to make a beautiful garment for the Lord." Dominic then replies: "So I am the fabric. You be the tailor, take me with you and you will make a beautiful garment for the Lord."
